This is a recipe I found before kids (Sarah and I call that time BK)...anyway, I think we ate about the whole thing together! It is delicious! We both crave this and make it at least once a year, and it is always special! -Kristin
1 (9inch) pie crust
1 1/2 c. mozzarella, shredded
5 large Roma tomatoes
1/2 c. fresh basil leaves
2 cloves garlic, minced
1/2 c. mayonnaise
1/4 c. Parmesan cheese, grated
1/8 t. pepper

- Bake pie crust at 400 for 9 minutes.
- Sprinkle 1/2 c. cheese on crust.
- Cut tomatoes into 8 wedges and place on paper towels for 5 minutes. Then arrange them on top of the cheese.
- In a food processor or blender combine basil and garlic; until very fine.
- Sprinkle basil mixture on top of tomatoes.
- Combine the rest of the ingredients in a bowl.
- Then spread over tomatoes.
- Bake 375 for 25 minutes.
