Crazy Cake

This is a cake my Mom always made when we were growing up. It is called crazy cake because there is no egg in the cake part. The cake and frosting are awesome. My kids all ask for this cake now too.  This is also a perfect cake recipe for cupcakes!  -Kristin

CAKE:
3 c. flour
2 c. sugar
6 T. cocoa
2 t. soda
1 t. salt
2/3 c. vegetable oil
2 T. vinegar
2 c. cold water
2 t. vanilla

FROSTING:
2 1/3 c. powdered sugar
1/2 t. salt
1 egg
2 T. water
1/4 c. sugar
1/2 c. Crisco
1 t. vanilla

  • For cake, mix together all dry ingredients and then add rest.
  • Grease a 9x13 dish and bake at 350 for 30-40 minutes.
  • Let cake cool completely.
  • For frosting, beat together the powdered sugar, salt and egg until smooth; set aside.
  • In saucepan combine the water and sugar and boil hard for 1 minute.
  • Slowly blend into powdered sugar mixture.
  • Slowly blend in Crisco and vanilla into mixture and beat until thickened.
  • Spread on cooled cake.
  • Store cake in refrigerator.
