Jam Filled Muffins



I've been making these fun muffins since I was a newlywed. They are still a treat. -Sarah

1 3/4 cup flour
1/2 cup sugar
1 T. baking powder
1/2 t. salt
2 eggs
2/3 cup milk
1/3 cup melted butter
1/2 t. lemon juice
1/2 cup jam

  • Combine dry ingredients.
  • In a small bowl lightly beat eggs, add milk, butter and lemon juice.
  • Mix wet ingredients into dry. Stir just until moistened.
  • Spoon half of the batter into 12 greased muffin tins. Spoon jam into centers of batter in each cup.
  • Spoon remaining batter over jam, making sure to cover.
  • Bake at 400 degrees 20-25 minutes.
