Gingerbread Muffins



Ohhhh, these are so good on a cold winter day! -Sarah

3 cups flour
1 1/2 t. baking soda
1/2 t. salt
1 t. cinnamon
1 t. ginger
1/2 t. cloves
1 cup butter, softened
4 T. brown sugar
4 T. sugar
1 egg, beaten
1 cup molasses
1 cup hot water, approximately

  • Stir together the dry ingredients in a large bowl.
  • Cream butter with sugars. Blend in egg and molasses. Stir into dry ingredients, with just enough hot water to moisten batter. Don't over mix.
  • Bake at 350 degrees for 20-25 minutes. (makes about 18 muffins)

I love these muffins with blackstrap molasses! Very strong flavor, but full of minerals and nutrients:)
