BBQ Muffins

This is another recipe from Taste of Home, my kids love these and I love that they are easy to prepare. -Sarah

1 tube refrigerated biscuits or 1 recipe of biscuits (posted on blog)
1 pound ground beef
1/2 cup ketchup
3 T. brown sugar
1 T. cider vinegar
1/2 t. chili powder
1 cup shredded cheddar cheese

  • If using refrigerated biscuits, separate, and flatten each biscuit. Press into greased muffin tin cups.
  • If using homemade dough, evenly divide batter between all 12 greased muffin cups. Lightly press dough into cups, on bottom and up sides.
  • Brown meat and drain. Add spices and seasonings.
  • Spoon meat into biscuit cups. Sprinkle with cheese.
  • Bake at 375 degrees for 15-18 minutes.

Are you sure you didn't steel this from me. I first made them in home-ec class in High school and have always enjoyed them.
