Southwestern Spaghetti


OK, I love Robin Miller's quick fix meals. This is another recipe from her Food Network show that I have been making for awhile. We love this! It is a good change from regular spaghetti dinners. It is so nice and easy and all the ingredients are usually in the cupboard, making it a quick fix meal. We like to serve this with shredded cheddar cheese on top and garlic bread. -Kristin

1 pound spaghetti noodles
1 (28oz.) can diced tomatoes
1 t. onion flakes
1/2 t. garlic powder
1 vegetable bouillon cube, broken up (or chicken bouillon)
1-2 pickled jalapeno slices
Salt and freshly ground black pepper
1/4 c. grated Parmesan
  • Cook spaghetti according to package directions, drain and set aside.
  • In a blender combine tomatoes, onion flakes, garlic powder, bouillon and jalapeno. Process until smooth.
  • Transfer mixture to a saucepan and set pan over medium-high heat and simmer for 5 minutes.
  • Season with salt and pepper to taste.
  • Serve sauce over noodles and sprinkle with Parmesan, and shredded cheddar too if desired.
