Butternut Squash Souffle


This is a hit every time I serve it. Another great recipe from Family Fun Magazine. -Sarah

2 cups cooked, mashed butternut squash
3 T. butter, softened
3/4 cup sugar
1/3 cup milk
1/2 t. salt
1 t. cinnamon
1/4 t. nutmeg
3 eggs
1 t. vanilla

  • Heat oven to 325 degrees. Grease 1 1/2 quart casserole dish.
  • Combine all ingredients in a large bowl. Beat with mixer until well combined.
  • Bake at 325 degrees for 75 minutes, until set.

Well I am glad to find this. I remember this being in Family Fun years ago and loved it (more dessert than vegetable ;) ) BUT I can't find it anywhere on the Family Fun site. So thanks for sharing it on your blog nearly a decade ago. I think it was even longer ago than that that I found it in the magazine. I KNOW I found it online once upon a time on their site, but it's gone now. Thank you Thank you.
