Oven "Fried" Chicken

I got this recipe from the Food Network website from the Robin Miller quick fix meals show. We love this and make it often. I love to have this chicken served with a big ole pile of mashed potatoes! -Kristin

2/3 c. oats
1 t. garlic powder
1 t. onion powder
1 t. mustard powder
1 t. paprika
1 t. dried oregano
1/2 t. dried thyme
1/2 t. salt
1/2 t. pepper
4-6 chicken breast halves, boneless and skinless
4 T. Dijon mustard
  • Preheat oven to 400 and grease large baking sheet.
  • In a Ziploc bag or shallow dish combine the oats, garlic powder, onion powder, paprika, oregano, thyme, salt and pepper. Mix well and set aside.
  • Brush each chicken breast with Dijon mustard.
  • Add chicken pieces to oat mixture and turn to coat on both sides.
  • Transfer to baking sheet and bake for 30 minutes or until chicken is done.
