Tex-Mex Lasagna


This is a recipe from my mom, it makes a hearty 9x13 pan which makes it great to serve for company too...or just for your family. She always made this with ground beef so if you want substitute the ground turkey for that. -Kristin

1 1/4# ground turkey or ground beef
1 package taco seasoning
16 oz. can diced tomatoes, drained
15 oz. tomato sauce
1 can refried beans
1.4 oz. can diced mild green chillies
16 oz. ricotta cheese
2 eggs, beaten
10 regular flour tortillas
2 c. montery jack cheese, shredded
1 c. Sharp cheese, shredded
4 oz. can sliced black olives

  • Cook ground turkey and drain. Add taco seasoning, diced tomatoes, tomato sauce, refried beans and green chillies. Bring to boil and reduce to simmer, uncovered for 10-15 minutes until thickened.
  • Combine ricotta and eggs in a bowl.
  • Spread 1/2 of meat mixture in ungreased 9x13 pan.
  • Tear tortillas into quarters and put half of them over the meat.
  • Spread 1/2 of the ricotta mixture over tortillas.
  • Sprinkle 1/2 of the cheeses over ricotta.
  • Repeat the layers once more, ending with cheese on top.
  • Bake 350 uncovered for 20 minutes.
  • Let stand 10 minutes before serving.
  • Slice into 15 peices.
