Pumpkin Butter

This is a recipe that I came up with a few years ago. It smells SO AWESOME on the stove! I make it and freeze it in small containers for another special breakfast. This pumpkin butter tastes like Fall to me! -Sarah

15 oz. can of pumpkin
1 cup applesauce
1/3 cup packed brown sugar
3/4 t. cinnamon
1/4 t. ginger
2 T. lemon juice

  • Combine all but lemon juice in a small saucepan.
  • Bring to a boil. Reduce heat and simmer, uncovered, stirring often for 45 minutes.
  • It will be very thick, stir in lemon juice.
  • Cool and refrigerate up to 2 weeks, or freeze.
