These are fun to have throughout the holidays. They are served in orange cups, so my kids think they are fun...and so do I, just something different! Being baked in the orange cups gives the sweet potatoes the perfect amount of orange flavor...these are soooooo good! -Kristin
6#'s large sweet potatoes
3/4 c. marshmallow creme
9 T. butter, room temperature
6 T. maple syrup
3 eggs
9 large oranges
36 pecan halves
additional marshmallow fluff

- Peel, cut and boil sweet potatoes until tender.
- Mash cooked sweet potatoes when done cooking.
- Add creme, butter and syrup and mash till smooth.
- Season with salt and pepper.
- Whisk in eggs. (This mixture can be made one day in advance up to this point)
- Lighty trim the bottom of both sides of the oranges so they will sit straight up. Then ut oranges in 1/2 and scoop out all of the pulp and save for another use.
- Fill cups with sweet potato mixture.
- Top with a dollop of marshmallow fluff and 2 pecan halves.
- Bake at 350 for about 30 minutes until beginning to brown.
