These bars are so yummy! This is Kristin's recipe. -Sarah
3/4 cup butter, softened
1/3 cup sugar
1/2 t. salt
1/2 cup oats
1 3/4 cup flour
1 T. cold water
Cream butter, sugar and salt. Stir in oats and flour. Make coarse crumbs, sprinkle with water. Mix and press into greased 9x13 pan. Chill for 15 minutes. Bake at 350 degrees for 15 minutes. Cool.

1 egg yolk
4 T. melted butter
1/2 cup milk
1/4 cup fresh lemon juice
zest of 1 lemon
1/2 t. vanilla
Combine 1st 5 ingredients. Whisk until smooth. Whisk in butter, then milk. Stir in remaining.
Pour over crust. Bake 22-25 minutes, until filling is just set and barely browned.
Cool and dust with powdered sugar.
