Egg Cheese Casserole


My Mom makes this for brunch every year at Christmas. This is a special recipe in our family that we look forward to having every year at Christmas.   This can be made the night before.  -Kristin

7 eggs, beaten
1 c. milk
2 t. sugar
1 t. salt
1# Monterey jack cheese, shredded
1# cottage cheese
4 oz. cream cheese, cubed
1/4 c. butter, cut up
1 t. baking powder
1/2 c. flour

  • Beat eggs, milk, sugar and salt; set aside.
  • Combine the 3 cheeses and butter; set aside.
  • To egg mixture add the baking powder and flour; mix well.
  • Stir the cheese mixture into the egg batter.
  • Pour into greased 9x13 pan and bake 350 for 40 minutes.
