Chicken Pot Pie


The perfect comfort meal!  -Kristin

1 (10 oz.) package mixed vegetables
1/3 c. butter
1/3 c. flour
1/3 c. chopped onion
1/2 t. salt
1/4 t. pepper
1 3/4 c. chicken broth
2/3 c. milk
2 1/2-3 c. diced chicken or turkey

Double pie crust (recipe on blog)

  • Melt butter in saucepan.
  • Stir in flour, onion, salt and pepper. Cook stirring constantly until mixture is bubbly then remove from heat.
  • Stir in the broth and milk and heat to boil; stirring constantly. After it starts to boil cook and stir 1 minute more.
  • Stir in chicken and vegetables.
  • Line the pie dish with pie crust.
  • Pour chicken mixture into crust and top with top pie crust. Put a few slits in the top.
  • Bake 425 for 35 minutes.
