5 c. flour (if doing light wheat rolls do 4 c. flour and 1 c. wheat flour)
5 t. yeast
1/4 c. butter
2 c. milk
1/2 c. sugar
1 T. salt
2 c. shredded cheddar (if making wheat rolls, omit cheese)
1 egg

- Mix 2 c. flour and yeast; set aside.
- Heat butter, milk, sugar and salt until butter is melted. Do not let the mixture get over 120 degrees. If making cheesy rolls, add the cheese and let melt; you do not want it to melt completely. It should be lumpy.
- Pour into flour and add egg. Beat for 3 minutes. Add remaining flour and knead 5-8 minutes. Adding additional flour to surface to prevent sticking.
- Place in a greased bowl. Let rise till double.
- Punch down and shape into rolls. Place into baking pan and let rise till double.
- Bake 400 for 15-18 minutes.
