Breakfast Cookies

These cookies are loaded and yummy. The directions may seem long and there are lots of ingredients but they are not hard to make and they are so worth the time you put into them. -Kristin

2 c. old fashioned oatmeal
1 1/4 c. whole wheat flour
1 c. flour
1 c. grapenuts cereal
1/2 c. wheat germ
1/2 c. oat bran
2 t. baking soda
1/2 t. salt
1 c. butter
2 eggs
1 c. brown sugar
3/4 c. sugar
1 T. vanilla
1/2 c. almonds, toasted and coarsely chopped
1 c. raisins
1 c. chopped dates
11 whole dates, sliced lengthwise

  • In large bowl beat butter till creamy and then add eggs, sugar and vanilla; beating till smooth. Set aside.
  • In separate bowl combine the oatmeal, flours, cereal, wheat germ, oat bran baking soda and salt.
  • Stir cereal mixture into butter mixture and stir till just blended.
  • Stir in almonds, raisins and chopped dates.Place 1/4 c. measurement of dough onto greased cookie sheets. Press date halve into center of each cookie. While the cookies bake, refrigerate the dough.
  • Bake at 350 for about 15 minutes. Let cookies stand on sheets for about 10 minutes.
  • Makes 22 really good sized cookies!
