Spinach Lasagna

This is a recipe that my Mom made when I was growing up. I always loved when we had this dish. This is called a lasagna, but there aren't any noodles in it, it's nice because it makes a smaller pan. It's still one of my favorites!-Sarah

1 1/2 pounds ground chuck
3 T. minced onion
1/4 t. garlic powder
24 oz. spaghetti sauce
1/3 cup dry breadcrumbs

1 1/2 cups cottage cheese
1 egg
1/4 t. pepper
3 T. dry breadcrumbs

8 oz. shredded mozzarella
10 oz. frozen spinach, thawed and squeezed dry
  • Brown chuck and onion. Drain and stir in garlic powder, spaghetti sauce and breadcrumbs.
  • combine cottage cheese, egg, pepper and breadcrumbs. (this is the cheese layer)
Layer lasagna as follows:
  • Spread 1/2 cup of meat sauce in bottom of 7x11 pan.
  • Sprinkle on 1 1/2 cups shredded mozzarella.
  • Over the cheese, sprinkle the spinach.
  • Next comes the cheese layer.
  • Top that with remaining meat sauce.
  • And finally sprinkle with the rest of the mozzarella cheese.
Bake this at 350 degrees till heated through, about 30 minutes.
