Tuna Bean Salad

This is so awesome. It is one of my favorite lunches! -Kristin

1 1/2 T. lemon juice
salt and pepper
1/3 c. olive oil
1 can water packed tuna, drained
1 can garbanzo beans, rinsed and drained
1 can white kidney beans, rinsed and drained
1/3 c. oil-packed sun dried tomatoes, sliced
1/4 c. finely chopped red onion
2 T. fresh basil or parsley (or 1 t. dried)

Whisk together lemon juice, salt, pepper and olive oil; then set aside. In different bowl combine rest. Pour dressing over and mix. Chill at least 2 hours before serving.
