Lentil Tacos

This mixture is awesome on a whole wheat tortilla or served as a dip for tortilla chips. -Kristin

1 t. olive oil
1 c. onion, minced
1/2 c. celery, minced
1 clove garlic, minced
1 c. red lentils
1 T. chili powder
2 t. cumin
1 t. dried oregano
2 c. veggie or chicken broth
1 c. salsa

Over medium heat add oil and saute onions, celery and garlic for 5 minutes. Stir in lentils and the rest of the seasonings. Cook for 1 minute. Add broth and simmer covered for 20 minutes or until lentils are tender. Remove the lid and cook stirring often until lentils are thickened; about 10 minutes. Stir in salsa. Serve on tortillas with cheese or as a tortilla chip dip.
