Hot Corn Dip



  • This is a fantastic appetizer that everyone will love! I crave this stuff. -Kristin

    Olive oil
    3 1/2 c. frozen corn kernels
    1/2 t. salt
    1/8 t. pepper
    1 c. yellow onions, finely diced
    1/2 c. red pepper
    1/4 c. green onions with the white parts too
    1 jalapeno, seeded and minced
    2 t. garlic, minced
    1/2 c. mayonaise
    4 oz. Mexican blend cheese
    1/4 t. cayenne
  • Put oven at 350.
  • Heat oil in skillet over medium high. Add corn, salt and pepper. Cook and stir until kernels turn golden; about 5 minutes. Transfer to bowl.
  • Add the yellow onions, garlic, peppers to the skillet and saute them in a little it more of olive oil. Cook until onions are wilted. Add green onions and saute until soft.
  • Mix together with corn. Add mayo, cheese and cayenne.
  • Place in 9 inch pie plate or something similar. Bake until bubbly and golden brown. About 10-12 minutes.
  • Serve with tortilla chips.
