Italian Bean & Pasta Soup


This is a yummy soup, I like to use orzo or alphabet noodles. This soup looks ordinary, but has a ton of great flavor! The red pepper gives it a nice little heat. -Sarah

1 cup chopped onion
1 cup chopped carrots
1 stalk celery, chopped
3 cloves garlic, minced
7 cups chicken broth
1 cup dried white beans
1 can diced tomatoes
1 t. dried rosemary
1 t. dried basil
1/4 t. crushed red pepper
1/4 t. dried rubbed sage
1 cup tiny pasta

-Saute vegetables in a large pot, in a little oil. Add all ingredients except pasta. Bring to a boil, reduce heat and cover. Simmer about 1 1/2 hours till beans are cooked through.
-Bring to a boil, add pasta and reduce heat, cover and simmer till pasta is cooked through.
