This is a great side dish, it goes well with many different main courses and always impresses company. Unless you aren't a huge fan of cilantro, but that's just crazy talk! -Sarah
1 small onion, finely chopped
1/2 cup chopped red pepper
1/2 cup chopped yellow pepper
2 garlic cloves, minced
1 T. olive oil
2 cups water
1 cup uncooked Basmatti rice
3/4 t. salt
1/4 t. pepper
chopped fresh cilantro
1. In a saucepan, cook onions, peppers and garlic till crisp-tender.
2. Add the water, rice, salt and pepper. Bring to a boil. Reduce heat, cover and simmer 18-22 minutes, till rice is tender.
3. Remove from heat and add cilantro, fluff with a fork.
