Our Favorite Potato Salad


This is the best potato salad I have ever had. Sarah and I both make this a lot through the summer. My Dad always makes the comment that it should not be just a summer side dish. He asks, "why can't we have potato salad in the winter and chili in the summer?"... he always likes to break the rules! -Kristin

3#'s red potatoes, wash and boil for 7 minutes or so, till just tender (or use regular potatoes, peeled and diced)

*Place in strainer after cooking and dab with 2 T. butter and 2 T. vinegar. Let sit over strainer till cooled a bit.

Then add to it and set aside:
1/2 c. onion, diced
2-3 celery ribs, diced
6 hard boiled eggs (save one for garnish)

Then mix dressing and pour over:
1 cup light sour cream
1 c. light mayonaise
1/2-1 t. celery salt
salt and pepper
