Hearty Lentil Soup


I LOVE this soup! It's got a lot of great flavor, and so many good things in it. It's great on it's own or served over baked potatoes with a sprinkle of shredded cheddar cheese. -Sarah

3 cups water
3 cups chicken broth
3 med. carrots peeled and diced
1 med. onion, chopped
1 cup dried lentils
2 celery ribs, diced
1/4 cup uncooked brown rice
1 t. basil
1 garlic clove, minced
1 small can tomato paste
3/4 cup frozen corn
3/4 cup frozen peas

Combine all but the last 3 ingredients. Simmer till rice and lentils are tender. Add remaining ingredients. Add more water or chicken broth as needed.
*this soup is very versatile, I have used mixed veggies in place of the frozen veggies, or added some diced canned tomatoes, many different possibilities with this soup.-Sarah
