I got this recipe out of a cookbook years ago, I had never tried minestrone soup before I made this and I instantly loved this soup. It's a great soup to take to a new Mom, with a loaf of fresh baked bread and a green salad. -Sarah
2 T. butter
1 pound beef, cubed
7 cups water
2, 15 oz. cans tomato sauce
1, 14 oz. can diced tomatoes
1 med. onion, chopped
1/2 cup celery, chopped
4 t. beef bouillon
2 T. parsley
1 t. salt
1/4 t. pepper
2 cups diced cabbage
1 cup thinly sliced zucchini
1 cup thinly sliced carrots
1, 15 oz. can garbanzo beans, drained and rinsed
1 cup macaroni noodles, uncooked
-Parmesan cheese
-In a large pot, heat butter. Brown beef, stir in remaining ingredients up to pepper.
-Bring to a boil, then reduce heat to low. Cover and simmer about 1 hour, till beef is tender.
-Add remaining ingredients, return to a boil, then reduce heat to low. Cover and simmer till macaroni is cooked through. About 20-25 minutes.
-Top servings with Parmesan cheese.
