Topsy Turvy Muffins (Black Bottom Cupcakes)

These are so fantastic. My Mom made these a lot when we were growing up. These are my Dad's favorites!  This recipe makes 18 cupcakes. -Kristin

1 1/2 c. flour
1 t. baking soda
1/2 t. salt
1 c. sugar
1/4 c. cocoa
1 t. vanilla
1/3 c. oil
1 c. water
1 T. vinegar

8 oz. cream cheese, softened

1 egg
1/3 c. sugar
1/8 t. salt
6 oz. chocolate chips

  • Sift together flour, soda, salt.
  • Beat into the flour mixture the remaining ingredients.
  • In a seperate bowl mix together the cream cheese, egg, sugar and salt.
  • Stir in the chocolate chips.
  • Fill paper lined muffin cups 1/2 full with the batter and then top with a heaping tablespoon of the cream cheese mixture.
  • Fill paper lined muffin cups 1/2 full with the batter and then top with 1 T. of the cream cheese mixture.
  • Bake at 350 for about 30 minutes.
