Italian rice

This is a unique dish that uses basic ingredients. I think it's best with both white and dark meat, so I usually roast a whole chicken in the oven for this dish. Just pull the meat off the bones and dice. This can be done a few days before and the dish can be thrown together very quickly. This reminds me of Spanish rice, but with Italian flavors and chicken.-Sarah

1 medium onion, diced
1 green pepper, chopped
3 cups diced chicken
2 1/2 cups cooked rice
3 cups spaghetti sauce

  • Saute onion and green pepper, in oil, until tender.
  • Add remaining ingredients and simmer 20 minutes.
