Spinach Rice Casserole

This is delicious. I served it for dinner tonight and all the kids looked disappointed. But, at the first bite they were suprised, they loved it! I got this recipe from tammysrecipes.com, she has very good recipes on her site. The only thing I would do differently next time is double it for sure!-Kristin

10 oz. fresh spinach leaves
1 T. water
1 t. dried minced onion
1 c. cooked rice (white or brown)
1 c. shredded cheddar cheese
1/3 c. milk
2 eggs, beaten
1 t. salt
1-2 c. leftover, cooked diced chicken (optional)

  • Place washed spinach in a large pan or skillet (with the water). Cover over medium-low heat until the spinach leaves wilt.
  • In a large mixing bowl, combine all other ingredients. Add the wilted spinach and stir.
  • Pour into a greased 8x8 inch baking dish.
  • Bake at 325 for 35-40 minutes, until set in the middle. (Test with a fork.)
