Coconut Bread

I am so impressed with this recipe, even my husband, who's not a big coconut fan likes it. It has a great coconut flavor, and the sugar on top bakes into a nice crunchy crust. -Sarah

1/4 cup butter, softened
1 cup sugar
1 egg
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
2 cups flour
3 teaspoons baking powder
1/4 teaspoon salt
1 cup milk
3/4 cup coconut

  • Cream butter and sugar. Beat in the egg and extracts.
  • Mix the dry ingredients together and add, alternately with the milk.
  • Fold in coconut.
  • Pour batter into a greased loaf pan. Bake at 350 degrees for 45-50 minutes.
