Chicken Artichoke Casserole

This is a wonderful, quick to throw together, family-pleasing, comfort casserole.  This is a great casserole to bring anywhere...like a potluck because it is easy and delicious.  The flavor is awesome and I love the the crunchy topping from the stuffing on top.  -Kristin

2 cans cream of chicken or celery
3/4 c. mayonnaise
3 c. cooked, cubed chicken
1 can (14 oz.) water-packed artichoke hearts, chopped
1 can (8 oz.) sliced water chestnuts
1 (6 oz.) package long grain and wild rice mix
1 medium onion, finely chopped
1 (2 oz.) jar diced pimentos, drained
1/4 t. pepper
1/2 t. salt

1-1 1/2 c. seasoned stuffing cubes
  • In a large bowl mix together all except the stuffing cubes.
  • Spoon into a greased 2 1/2 quart baking dish.
  • Sprinkle with the stuffing cubes.
  • Bake uncovered at 350 for 55-65 minutes or until the edges are bubbly and rice is tender.
