Mini Lemon Poppy seed Muffins

These muffins are so moist and delicious. My family loves the flavor of lemon poppy seed muffins and breads.-Sarah

2 cups flour
3/4 cup sugar
1 t. baking powder
1 t. baking soda
1/2 t. salt
1 cup sour cream
1/2 cup vegetable oil
2 eggs
2 T. poppy seeds
2 T. milk
1/2 t. vanilla
1/2 t. lemon extract

  • In a large bowl combine dry ingredients.
  • Combine remaining ingredients in a separate bowl. 
  • Gently mix together just until moistened.(batter will be thick) 
  • Fill greased mini muffin tins and bake at 400 degrees about 12 minutes.
