This is a Martha Stewart recipe and doesn't disappoint! Kristin and I have a weakness for all things marshmallow! -Sarah
1 3/4 cup flour
3/4 cup cocoa powder
1/2 t. baking soda
1/2 t. salt
1 stick butter, slightly softened
1 cup sugar
1 egg
1/2 cup milk
1 t. vanilla
12 large marshmallows, halved
Chocolate Frosting
3 1/2 cups powdered sugar
4 T. softened butter
1/4 cup cocoa powder
1/4 cup milk
1/4 t. vanilla

- Whisk dry ingredients together.
- Cream butter and sugar until fluffy. Add egg, milk and vanilla. Beat until combined.
- Add dry ingredients and mix on low until just combined.
- Roll into 24 balls and bake about 10 minutes. Remove from oven and press half a large marshmallow into center of cookie. Place back into oven until marshmallow just begins to melt, about 2 minutes.
- Cool and frost cookies. (You can't see the marshmallow until you bite into the cookie...that is the surprise!)
