This recipe is from my mother-in-law, Gail. These yummy cookies are addictive! My husband says that anything is good when you spread cream cheese frosting on it! -Sarah
1 cup butter
1 cup sugar
1 t. vanilla
1 egg
1 cup pumpkin
2 1/2-3 cups flour
1 t. baking soda
1 t. cinnamon
1/2 t. nutmeg
1/4 t. ground ginger
1/2 t. salt
Cream Cheese Frosting
4 T. butter
4 oz. cream cheese, softened
1/2 t. vanilla
2 cups powdered sugar
-Beat butter and cream cheese, add vanilla and powdered sugar, beat to spreading consistency.
- Cream butter, sugar, vanilla and egg. Beat until fluffy and add pumpkin.
- Add dry ingredient until stiff dough forms.
- Drop onto greased cookie sheets. Flatten slightly with fingers.
- Bake at 350 degrees about 10 minutes.
- Cool and frost with cream cheese frosting.
