My Dad and my father in law love rhubarb desserts. This is an old one from my Mom's recipe box. I try to get rhubarb to stock my freezer every summer, then I can make delicious recipes like this all year round. -Sarah
-Mix and press half of mixture into a greased 2 qt. baking dish. Reserve remaining crumb mixture for topping.
1 cup flour
1/2 cup brown sugar
1/2 cup butter
3/4 cup oats
-Cook in a saucepan until thickened.
1 cup sugar
2 T. cornstarch
1 cup water
-Stir in rhubarb and pour over crust.
4 cups chopped rhubarb, fresh or frozen (if using frozen slightly thaw first)
-Sprinkle with reserved crumb mixture and bake at 375 degrees for 40 minutes.
