Fluffy White Frosting aka 7 Minute Frosting

This is the frosting my mom made a lot through my childhood years.  This frosting is very fluffy and marshmallow like.  The recipe calls for egg whites and they get cooked when the hot syrup is poured into them.  This frosting is also great on angel food cake.  -Kristin

1 cup sugar
1/3 cup water
1/3 teaspoon cream of tarter
1/3 cup egg whites
1 1/2 teaspoon vanilla

  • In a saucepan combine the sugar, water and cream of tarter.  Heat to 242 degrees.  
  • While syrup is cooking beat the egg whites until stiff enough to hold a point.
  • Pour hot syrup very slowly in a steady, thin stream into stiffly beaten egg whites; beating constantly.
  • Add the vanilla.
  • Beat until frosting holds shape.  About 7 minutes :)!!

Pudding Cupcakes

I love the versatility of this fun cupcake recipe. You can use your favorite instant pudding to give these cupcakes any flavor you desire. I topped mine with pudding frosting and I think it's the perfect combo!-Sarah

1 3/4 cup flour
2/3 cup sugar
1 small pkg instant pudding mix
2 t. baking powder
1/2 t. salt
2 eggs
1 1/4 cup milk
1/2 cup vegetable oil
1 t. vanilla extract

  • In a bowl combine the dry ingredients.
  • In another bowl beat the eggs, milk, oil and vanilla.
  • Add to wet ingredients and mix until blended.
  • Spoon batter into 12 paper lined muffin cups. Bake at 375 about 18 minutes.
  • Cool and frost.

Oreo Cupcakes

These were a hit when I made them recently! They are really yummy and really easy to make.-Sarah

1 box chocolate cake mix + ingredients to make cake mix
1 bag Oreos
8 oz. cream cheese, room temperature
1 stick butter, room temperature
3 3/4 cups powdered sugar
1 t. vanilla

  • Make cake mix according to directions. Place 1 whole Oreo on bottom of each lined cupcake cup.
  • Take half of remaining Oreo's and roughly chop, fold into cake batter. Spoon batter into cupcake liners. 
  • Bake about 15 minutes.
  • Beat butter and cream cheese until well mixed. Add vanilla and powdered sugar until fluffy. 
  • Place remaining Oreo's into a food processor and process until fine crumbs. Fold into frosting.

Strawberry Cupcakes with Strawberry Cream Cheese Frosting

These are amazing!  I shared these and the Dark Chocolate Cupcakes with Peanut Butter Cream Cheese Frosting at a shower I had for a friend.  Both these cupcakes were a hit.  The frosting on these cupcakes is so amazingly wonderful :)  I make this recipe to fill 15 muffin cups.  When I did 12 they were too full.  Another option is to make 12 cupcakes and some minis, which are adorable!  -Kristin


1 1/2 cups flour
1 teaspoon baking powder
1/4 teaspoon coarse salt
1/2 cup softened butter
1 cup sugar
1 egg
1 teaspoon strawberry extract
2 egg whites
1/4 cup milk
2/3 cup pureed strawberries- (1/3 c. for cupcakes and 1/3 c. for frosting)

FROSTING:
1/4 cup softened butter
8 oz. softened cream cheese
1/3 cup pureed strawberries
2 teaspoon strawberry extract
5-6 cups powdered sugar
  • Mix together the dry ingredients for the cupcakes and set aside.
  • In a bowl beat together the butter and sugar.
  • Beat in the eggs and strawberry extract.
  • Stir the milk and pureed strawberries together.
  • Then beat in some of the flour mixture alternating with the strawberry mixture.
  • Fill 15 muffin tins with cupcake liners.  Spray the tops of the muffin pan with cooking spray just in case any bake over.
  • Bake at 350 for 22-25 minutes.
  • Cool completely and then frost.
  • For frosting beat together the softened butter and cream cheese.  Add the extract and 1/3 c. pureed strawberries.  Then beat in the powdered sugar till desired consistency.

Cream Filling or Frosting

This is a recipe that I've been wanting for a long time. I've tried different filling recipes and none have been as good as this one! It's an amazing, fluffy white frosting that has more of a filling texture to me. I've used it to fill cupcakes and it would be a great cake filling. Try it, you might just want to frost something with it. -Sarah

1 cup milk
5 T. flour
1 t. vanilla
-Combine milk and flour in a small saucepan with a whisk until combined. Heat over medium heat stirring until mixture is thickened. Remove from heat, stir in vanilla. Cool.

1 cup butter
1 cup sugar (not powdered sugar)
-Beat butter and sugar until very well combined. Add the thickened mixture, making sure it's completely cooled! Beat until light and fluffy, making sure not to over beat. It will resemble whipped cream.

One Bowl Chocolate Cupcakes


This is a great recipe for some great cupcakes! I love how easily the batter comes together and the dense homemade cake texture. I've made them with and without the chocolate chips and both ways turn out great. I also love how the tops bake up rounded. -Sarah

1 3/4 cups flour
1 cup brown sugar (not packed)
1 t. baking soda
1 t. baking powder
1/2 t. salt
1/4 cup cocoa powder
1 cup milk
1 egg, lightly beaten
1/3 cup oil
1 t. vanilla
1 cup mini chocolate chips (optional)
  • Mix dry ingredients together until well mixed.
  • Add the wet ingredients and mix just until combined. Stir in chocolate chips if using.
  • Spoon into paper lined muffin tins. Bake at 350 degrees about 18 minutes.
  • Makes 12 cupcakes.

Chocolate Chip Cupcakes with Fudge Frosting






These cupcakes are so yummy! It's a recipe that I gave my Mom years ago, she made these for a family reunion recently and I got some pictures before they were all gobbled up! The fudge frosting is her addition. -Sarah

Chocolate Chip Cupcakes
1 pkg. yellow or white cake mix
1 small package instant vanilla pudding
1/2 c. oil
1 c. water
4 eggs
1 c. chocolate chips

-Combine all but chocolate chips and beat on low until mixed and then on medium speed for 4 minutes.
-Stir in chocolate chips. Fill paper lined cupcake pans. Bake at 375 for 18 minutes. Cool and frost.

Fudge Frosting
1 c. sugar
5 T. butter
1/3 c. milk
1 c. chocolate chips

-Bring sugar, butter and milk to a boil and boil for 1 minute.
-Remove from heat and add chocolate chips, stir until they melt into the frosting.
-Cool to room temperature and frost cupcakes.
(This is a softer frosting and it works well to dip the cupcake top into the frosting and smooth out with a knife)

Topsy Turvy Muffins (Black Bottom Cupcakes)

These are so fantastic. My Mom made these a lot when we were growing up. These are my Dad's favorites!  This recipe makes 18 cupcakes. -Kristin

1 1/2 c. flour
1 t. baking soda
1/2 t. salt
1 c. sugar
1/4 c. cocoa
1 t. vanilla
1/3 c. oil
1 c. water
1 T. vinegar

8 oz. cream cheese, softened

1 egg
1/3 c. sugar
1/8 t. salt
6 oz. chocolate chips

  • Sift together flour, soda, salt.
  • Beat into the flour mixture the remaining ingredients.
  • In a seperate bowl mix together the cream cheese, egg, sugar and salt.
  • Stir in the chocolate chips.
  • Fill paper lined muffin cups 1/2 full with the batter and then top with a heaping tablespoon of the cream cheese mixture.
  • Fill paper lined muffin cups 1/2 full with the batter and then top with 1 T. of the cream cheese mixture.
  • Bake at 350 for about 30 minutes.
