Black Bean and Corn Salsa

This is a great dip for chips, on its own or as a topping to Mexican style entrees.  If you are not a big fan of cilantro don't add as much or try leaving it out all together.  You can't go wrong with these ingredients...it will be delicious either way! -Kristin

1 (15 ounce) can white corn, drained
2 (15 ounce) cans black beans, drained and rinsed

Cranberry Salsa Dip with Cream Cheese

My friend Donna made this dip for our New Years Eve party.  This is one of those dips that some will like a lot and others won't like at all.  I am posting it because I think it is awesome.  I love the ginger flavor in the cranberries.  It is very unique, tasty and very addicting if you like the flavor combo!  -Kristin

This recipe is so good! I made it with 1 T. of ginger and thought it was perfect because I'm not the hugest ginger fan but if you are then go for it!-Sarah

1 (12-ounce bag) or 3 cups fresh cranberries, rinsed and drained
1/4 cup minced green onions
2 small (approximately 2 tablespoons) jalapeno peppers
cored, seeded and minced (optional)
1/2 cup sugar
1/4 cup fresh
cilantro, minced
2 tablespoons finely-grated fresh ginger
2 tablespoons fresh-squeezed lemon juice

2 (8-ounce) packages cream cheese
1/8 cup sugar

Wheat Thin crackers to serve with
  • Rinse, drain, and pick over cranberries, (discarding all that are soft or bruised). Place them in a food processor; pulse until finely chopped but not mushy.
  • Place crushed cranberries in a bowl; mix together with green onions, jalapeno peppers, sugar, cilantro leaves, ginger, and lemon juice. Cover with plastic wrap and refrigerate at least 4 hours so flavors develop (salsa will be too sharp and tart to begin with).
  • Mix together the cream cheese with the sugar and spread over the bottom of a pie plate.
  • When the salsa is ready place that over top of the cream cheese and serve with crackers.

Hot Spinach Dip

I got this recipe from Taste of Home.  It is awesome!  I made it for a Christmas Eve party and everyone loved it.  The bacon in there makes it incredibly delicious!  You can serve this in a bread bowl to be fancy or just put in a baking dish.  The original recipe calls for just a one pound loaf of bread...but, I served it with an extra one and we ate about half of it.  The original recipe also states that fat free cream cheese and mayo do not work well with this recipe.  Also, the original recipe says to broil the bread cubes and I did not, we liked the bread soft.  -Kristin

2 packages (8 ounces each) cream cheese, softened
1 cup mayonnaise
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 cup (4 ounces) shredded cheddar cheese
1 pound sliced bacon, cooked and crumbled
1/4 cup chopped onion
1 teaspoon or more of dill weed
1 to 2 garlic cloves, minced
2 round, 1 pound loaves of rye or sourdough bread, unsliced

  • In a large bowl, beat cream cheese and mayonnaise until blended. Stir in the spinach, cheese, bacon, onion, dill and garlic; set aside.
  • Cut a 1-1/2-in. slice off top of bread; set aside. Carefully hollow out bottom, leaving a 1/2-in. shell.
  • Fill bread shell with spinach dip; replace top. Place any dip that doesn't fit in shell in a greased baking dish. Wrap bread in heavy-duty foil; place on a baking sheet. Bake at 350° for 1 hour or until dip is heated through. Cover and bake additional dip for 40-45 minutes or until heated through. Open foil carefully. Serve dip warm with vegetables and reserved bread cubes.

Bacon wrapped Jalapeno's

This recipe is from the Pioneer Woman, and these are delicious! Kristin's family and ours recently went on an annual vacation together and we made these ahead and froze them. We pulled them out at the cabin and baked them up, they were a hit! I've made them several times since and they disappear quickly every time! There isn't much to them but they are worth posting!-Sarah

Jalapenos, sliced in half and seeded
cream cheese
bacon
  • Stuff Jalapeno halves with cream cheese, a spoon works best.
  • Wrap bacon around and secure with a toothpick. Depending on the size of your pepper's I cut the bacon pieces in thirds or halves.
  • Bake at 375 degrees 20-25 minutes. If you want the bacon browned up a bit more put them under the broiler for a few minutes to finish them.

Buffalo Chicken Dip

There a lot of versions of this dip out there, I'm sure they are all good. This can be changed to suit your tastes, it's a quick recipe to throw together and the results are delicious! -Sarah

2, 8 oz. pkg's cream cheese
16 oz. Ranch or Blue Cheese dressing
12 oz. Red Hot
3 cups shredded chicken
2/3 cup minced celery
8 oz. shredded Montery Jack cheese
  • In a saucepan heat the cream cheese and dressing until completely combined, stir in Red Hot.
  • Combine chicken, celery and shredded cheese in a bowl.
  • Add Red Hot mixture to bowl and mix well. Spread in a 9x13 pan and bake at 350 until heated through, about 30 minutes. Or just microwave until cheese is melted.
  • Serve with tortilla chips, corn chips or celery sticks.
I've made this a few different ways, it's easily adaptable. You can substitute some of the Montery jack cheese for crumbled blue cheese, or sprinkle with cheese when it's heated through. You can also adjust the temperature of this dish by using less Red Hot. Enjoy, it's yummy!

Homesick Texan's Salsa

This salsa recipe is off of the Homesick Texans website. It is delicious! My whole family likes spicy so I used 2 Serrano peppers...it is hot! So, start with one pepper and see what you think before adding the other. Oh, ENJOY! -Kristin

28 oz. canned tomatoes, undrained
2 Serrano peppers (or 2 jalapenos which are a bit milder)
1 c. fresh cilantro
2 garlic cloves, minced
1/4 onion, chopped
2 T. chili powder
salt
juice from 1/2 of a lime
salt to taste
dash of sugar, opt.
  • Place all in blender and blend till smooth.

My family LOVES this salsa! I can't count how many times I've made it, we prefer it chunky, I put up a picture of how it looks when I make it chunky, and here's how I do it. I use the exact same ingredients, but I drain my tomatoes and I blend all the ingredients with about 1/2 a can of tomatoes until it's all mixed together, then add the rest of the tomatoes and pulse a few times until it's all chopped up.-Sarah
