This is a great cold rice salad that goes great with many meals or as a light lunch. -Kristin
2 c. cooked brown rice
1 can corn kernels

1 can black beans, rinsed and drained
1 green bell pepper, diced
2 celery stalks, diced
1 small red onion, diced
1 jalapeno, seeded and minced (or 1-3 canned pickled jalapenos minced)
4 T. red wine vinegar
3 T. lime juice, fresh
2 T. olive oil
1/2 t. salt

- In a large bowl, combine all ingredients and stir well.
- Refrigerate for at least an hour.
