Strawberry Pie

Not sure that this recipe is very unique, it's the only strawberry pie recipe I use. The very first time we pick strawberries every Summer I make this pie for dessert that night. The boys would never let me forget this tradition! -Sarah

1 cup sugar
2-3 T. cornstarch
1 cup water
-Boil until clear and thick and add:

2 T. strawberry Jell-O powder

Cool completely and fold about 5 cups of halved strawberries into Jell-O mixture. Spoon into baked and cooled pie shell. Refrigerate and serve with Cool Whip!

Strawberry Rhubarb Pie

My Mother-In-Law made bunches and bunches of these when my husband was growing up, she would freeze them for later in the winter. None of mine have made it into the freezer yet, I guess I need to make more! -Sarah

1 1/2 cups sugar
1/4 cup flour
1/4 t. salt
1/4 t. nutmeg
1 cups 1/2 inch sliced rhubarb
1 cup sliced strawberries
double pie crust
1 T. butter
  • Combine 1st 4 ingredients, add fruit and mix well. Let stand for 20 minutes.
  • Pour into pie crust, dot with butter, top with other crust.
  • Bake at 400 degrees for 40-45 minutes.

Gingerbread Muffins



Ohhhh, these are so good on a cold winter day! -Sarah

3 cups flour
1 1/2 t. baking soda
1/2 t. salt
1 t. cinnamon
1 t. ginger
1/2 t. cloves
1 cup butter, softened
4 T. brown sugar
4 T. sugar
1 egg, beaten
1 cup molasses
1 cup hot water, approximately

  • Stir together the dry ingredients in a large bowl.
  • Cream butter with sugars. Blend in egg and molasses. Stir into dry ingredients, with just enough hot water to moisten batter. Don't over mix.
  • Bake at 350 degrees for 20-25 minutes. (makes about 18 muffins)

Pumpkin Blueberry Streusel Muffins



I know that this sounds like a strange combination, but you just have to give these a try! This is probably my favorite muffin recipe! Now I want one! -Sarah

1 1/4 cup flour
1 cup sugar
1 t. cinnamon
1/2 t. nutmeg
1/8 t. cloves
1/2 t. baking soda
1/2 t. salt
3/4 cup pumpkin
1 egg
1/4 cup oil
3/4 cup blueberries

Streusel Topping:
1/8th cup sugar
1 T. flour
1/4 t. cinnamon
1 T. butter, softened
-Mix with fork until crumbly

  • Combine dry ingredients.
  • Combine wet ingredients.
  • Stir together until just moistened. Fold in blueberries.
  • Spoon into 9 greased muffin tins. Sprinkle with streusel mixture.
  • Bake at 350 degrees for 20 minutes.

Jam Filled Muffins



I've been making these fun muffins since I was a newlywed. They are still a treat. -Sarah

1 3/4 cup flour
1/2 cup sugar
1 T. baking powder
1/2 t. salt
2 eggs
2/3 cup milk
1/3 cup melted butter
1/2 t. lemon juice
1/2 cup jam

  • Combine dry ingredients.
  • In a small bowl lightly beat eggs, add milk, butter and lemon juice.
  • Mix wet ingredients into dry. Stir just until moistened.
  • Spoon half of the batter into 12 greased muffin tins. Spoon jam into centers of batter in each cup.
  • Spoon remaining batter over jam, making sure to cover.
  • Bake at 400 degrees 20-25 minutes.

Aunt Maud's Blueberry Muffin's


Not sure where the name comes from, but these are awesome blueberry muffins. -Sarah

1/4 cup butter, softened
1/2 cup sugar
1 egg
3/4 cup milk
1/4 t. vanilla
1 3/4 cups flour
2 1/2 t. baking powder
1/2 t. salt
1 1/2 cups blueberries

  • Cream butter and sugar, beat in egg, milk and vanilla.
  • Stir together the dry ingredients. Stir into the creamed mixture. Batter should be lumpy.
  • Gently stir in blueberries, spoon into greased muffin tins. (makes 10-12 muffins)
  • Bake at 425 degrees for about 18 minutes.

Cappuccino Muffins


These are so good! (if you like coffee and chocolate) -Sarah

2 cups flour
3/4 cup sugar
2 1/2 t. baking powder
1 t. cinnamon
1/2 t. salt
1 cup milk
2 T. instant coffee granules
1/2 cup butter, melted
1 egg, beaten
1 t. vanilla
3/4 c. mini chocolate chips

  • Combine dry ingredients.
  • Combine milk and coffee granules, stir to dissolve.
  • Combine wet ingredients, stir into dry.
  • Fold in chocolate chips. Fill 12 greased muffin cups.
  • Bake at 375 degrees for about 15 minutes.
