1 cup pitted Medjool dates, soak in water for 10 minutes
1/2 cup pecans
1/3 cup pumpkin puree
1/4 cup unsweetened coconut flakes
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
2 teaspoons vanilla (optional)
pinch of salt
- Begin by placing pecans in a food processor and pulse till they are a finely ground.
- Add remaining ingredients and pulse till smooth.
- Roll into balls and place in refrigerator for about 30 minutes.
