1 (10 oz.) package mixed vegetables
1/3 c. butter
1/3 c. flour
1/3 c. chopped onion
1/2 t. salt
1/4 t. pepper
1 3/4 c. chicken broth
2/3 c. milk
2 1/2-3 c. diced chicken or turkey
Double pie crust (recipe on blog)

- Melt butter in saucepan.
- Stir in flour, onion, salt and pepper. Cook stirring constantly until mixture is bubbly then remove from heat.
- Stir in the broth and milk and heat to boil; stirring constantly. After it starts to boil cook and stir 1 minute more.
- Stir in chicken and vegetables.
- Line the pie dish with pie crust.
- Pour chicken mixture into crust and top with top pie crust. Put a few slits in the top.
- Bake 425 for 35 minutes.
Kristin made this for our family when we had our last baby, Joey, and it was wonderful! I'm making it tonight by request from my kiddos!
