Spinach and Rice Side Dish


This is a salad I have a hard time staying out of. I got this recipe from a lady at our church who had brought it to a church potluck. It is always a hit. -Kristin

2 boxes of Near East Original Rice Pilaf
8 oz. zesty Italian salad dressing
1 bag slivered almonds, toasted
16 oz. baby leaf spinach
3 small green onions, sliced
1 # bacon, cooked and crumbled

Prepare rice without butter and place in a 9 x 13 pan. Chill and fluff, add dressing, stir and marinade overnight.

Add onions to rice. Layer rice, spinach, almonds and then bacon. Toss before serving.
