Orzo With Peas


I have made this dish many, many times, my kids gobble it up! It's great with some grilled chicken and a salad.-Sarah

1 1/2 cup uncooked orzo
1 cup frozen peas, thawed
3 T. butter
1 t. oregano
1/2 cup crumbled feta cheese
2 t. fresh lemon juice
1/2 t. lemon zest
1/4-1/2 t. salt
1/8 t. pepper

-Boil water, add salt. Add orzo, cook and stir occasionally for 9 minutes. Stir in peas and return to a boil. Boil 1 minute. Drain.
-Toss orzo and peas with butter and oregano. Stir to melt butter.
-Stir in feta, lemon juice, zest, salt and pepper.
