Banana Oat Pancakes


These are a family favorite, I'm giving the amounts that I use for my family. It makes quite a big batch, but my kids love these, and they heat up well the next day. So cut the recipe in half if you don't want so many. -Sarah

2 2/3 cups white or whole wheat flour
1 1/2 cups old fashioned oats
2 T. brown sugar
4 t. baking powder
1 1/2 t. salt
1 t. cinnamon
2 eggs
2 2/3 cups milk
2 cups well mashed banana
4 T. oil

  • Combine dry ingredients in a large bowl.
  • Whisk wet ingredients into a small bowl.
  • Stir wet ingredients into dry ingredients, just till moistened.
  • Cook on greased griddle.
